Cucumber Mint Pops

Children and adults alike will enjoy a respite from the summer heat with one of these refreshing and nutritious pops. For best results, leave them in the freezer overnight before serving:

What you’ll need:

1 cup water

1 cup agave nectar (blonde)

1 cup matcha or green tea

6 stems of fresh mint

2 medium sized cucumbers

How to make them:

In a saucepan, bring water to boil and stir in agave nectar. While the mixture is still hot, add the mint sprigs. Remove from heat and cool to room temperature.

Prepare matcha tea (green tea may be used instead). Cool to room temperature.

Remove mint sprigs from the nectar mixture.

Peel and chop the cucumbers and place in a blender or food processor. Add the agave mixture and the green tea and blend thoroughly. Pour mixture into popsicle molds and freeze for at least 4 hours.

Bust them out when the temperatures hit 90!
